For grilled as well as uncooked meat, we can guide them on a journey into taste that leads far from the best-known routes, in search of quality beyond the everyday standard, making them feel at home, for a journey into ‘tailor made’ taste, under the banner of spontaneity and inclusiveness.

The pursuit of excellence in the best meats leads us to be tireless travellers, on the trail of the most prestigious national and international producers. Meat is at the centre of our taste and investigation, with a particular focus on identifying virtuous farms that raise animals in their natural state, which alone can give us tastier and more ethical meat. Respect for the raw material is a priority in guaranteeing our guests the excellence that distinguishes our brand.

Our search for the best cuts of beef in the United States led us to Creekstone Farms +, one of the best Black Angus producers. For the first year and a half of their lives, these cattle are exclusively fed on grass, which is readily available on Midwestern farms. For the last 180 days prior to processing, the diet is exclusively corn-based, which increases marbling for a more tender and elegant meat. Creekstone Farms’ beef is USDA (United States Department of Agriculture) certified, recognised for their attention to the animal’s nutrition and care as well as the short supply chain.
Directly from Australia’s largest ranch with more than 6.4 million hectares of land in Queensland and the Northern Territory (this equates to about 1% of Australia’s land area) where 36,0000 head of F1 Wagyu cattle are grazed. The cattle are exclusively grass-fed for two and a half years; for 330 days prior to processing, the feed is wheat-based, which promotes the development of a fine and uniform marbling. At Varrone we only use the 8+ selection, the highest AACo level. Tasting this type of meat is a true EXPERIENCE in Meat Excellence.
We exclusively offer the world’s finest meat, black cattle reared in the Kobe prefecture from the Tajima ‘black cattle’ line. Only 3000 animals of this breed are selected each year. Their tender and flavourful meat makes for a true gastronomic taste experience.
The black cattle raised in the Kyoto Prefecture live in pristine areas. The water they drink is exclusively spring water. The minerality is important in balancing the taste of the meat. Fed on nutrient-rich timothy grass until the fifth month, their stomachs are prepared for the cereal-based diet of the adult animal. Processed between 30 and 36 months, their meat is elegant and melts in the mouth.
We bring to the table only the best black cattle raised in Kagoshima Prefecture and processed at about 24 months. The meat is compact both in lean and fatty fibres, with a delicate and full flavour for both types.
Our research is focused on the taste of meat. Granda selects only Piedmonts breed cattle with slow food presidium, the best breed to enjoy raw. Pink, balanced, lean, very delicate.
For several years we have been collaborating and tasting the excellence of F1 AND FULL BLOOD, to date we consider it the Wagyu herd with the best full blood meat from animals bred outside Japan. The true made-in-Italy experience with Asian flavour.
The Spanish jamon excellence is from Joselito, the “best jamon in the world”, as declared by great gastronomic critics and chefs at the level of Ferran Adrià. Massimo Minutelli has had a strong relationship with the Gomez family for thirteen years. He was a guest at the 150th anniversary grand gala at their Extremadura estate, where he was able to experience first-hand the company’s philosophy that sees the pigs living in a true ecosystem, grazing in immense oak forests and eating the acorns which give the meat its distinctive flavour. Experiencing their reality first hand was considered by Massimo to be one of the most beautiful situations he has ever been in.
Among the best cattle breeds in the world, we offer the Spanish ox with rubia gallega, cachena and sayaguesa. 7-15 year old animals that live in the wild, feeding on grass over vast areas. The flavour of their meat is among the tastiest and the aroma of their fat is intoxicating. Our suppliers are Jose and Miguel, from the company Gutrei Galizia Roxa D’uoro, one of the most established in the area.
